The Facts
Vitamin A can be obtained as retinol or carotenoids.

 

The aldehyde form of the retinol form of vitamin A serves as the light gathering part of the visual pigments. The recovery process at which the eye adapts to vision in dim light after being exposed to bright light depends on a sufficient intake of Vitamin A. Sufficient intakes are also important for efficient remodelling of bone during growth.  Due to complications of fertility associated with vitamin A deficiency, it can be seen that it plays a part in the biochemical mechanism of reproduction. However its role is unknown.

 

Carotenoids are compounds of vitamin A found in plant foods, which are important antioxidants.

 

The Foods
Retinol: liver, butter, margarine, eggs, cream, cheese, and yoghurt.

Carotene: pepper, carrots, spinach, seaweed, sweet potato, butternut squash, pumpkin, spring greens, cabbage, tomatoes, courgettes, broccoli, brussell sprouts, asparagus, sweetcorn, parsnips, cauliflower, parsnip, lettuce, and mushrooms.
