Vitamin B1 (Thiamin)

The Facts
Thiamin is used as a co-enzyme in the Citric Acid Cycle to release energy from glucose as well as in the completion of the metabolism of branched chain amino acids (BCAAs) and alcohol metabolism. Thiamin produces Acetyl CoA, which is used in the synthesis of neurotransmitters. It is important for nerve function as it controls cl- ion channels.

 

Dietary requirement of Thiamin depends upon carbohydrate intake.

Meat (pork, bacon, gammon, kidney)
Beans and pulses (peas, broad beans and red lentils)
Nuts (peanuts, hazelnuts, cashew nuts, and walnuts)

Fortified cereals, wholemeal spaghetti, bulgur wheat, brown rice, noodles and chapatti flour.
